So, this recipe isn’t anything fancy. But it’s quick and delicious!

Recipe (Note: 1 spaghetti squash serves about 2 servings for us)
- Preheat oven to 400
- Slice spaghetti squash in half and scoop out seeds, and then drizzle with about a tablespoon of avocado oil or olive oil for roasting
- Roast for about 30-40 min at 400
- Add chicken (I used rotisserie chicken, but you could always make your own pulled chicken in instant pot)
- Top with buffalo sauce (I love this one from The New Primal, it’s Whole 30 too!)
- Top with mozzarella cheese! (I use dairy free almond mozzarella from Trader Joes!)
And of course, I had to make carrot fries too! 🙂 Hope you enjoy this quick dinner idea! xx 🙂
